How this was put together

Every product below met all four of these tests, which were written down before any figure was compared:

1. It is a salad dressing or vinaigrette sold at retail in the United States. Mayonnaise, dips, marinades, sauces, spreads and dry seasoning mixes are excluded.
2. Its manufacturer's label data is published in USDA FoodData Central's Branded Foods dataset, so every figure has a permanent public record anyone can open.
3. It is sold under one of 23 named brands chosen for shelf recognition, spanning mainstream leaders, restaurant labels, premium brands, better-for-you challengers and private label.
4. Its record reports both calories and protein, without which figures cannot be put on a common footing.
5. It is a caesar dressing, named as one on its own label. A caesar is compared against other caesars because that is the choice a shopper is actually making on the shelf.
Every product meeting all four is included. None was removed after its figures were seen. The better-for-you brands are in the set deliberately — they are the toughest comparison available, and leaving them out would have made every number below look better and mean less.
Products their own manufacturer labels "light", "lite" or reduced-calorie are recorded but do not count toward the figures. A reduced-calorie dressing is a different proposition from a full-fat one. This exclusion moves the figures in our favour — it raised the comparison calories from 112 to 120 — so every excluded product is listed below by name with the reason, and you can judge it for yourself.
What this set does not cover: Primal Kitchen — No salad dressing record in USDA FoodData Central at the time of collection. A brand missing from the source is a gap in this comparison, not a judgement about the brand.

How the figures were normalized

Putting labels on the same footing
Figures shown to a reader are per a single reference serving in grams, computed as the per-100 g value multiplied by (reference serving ÷ 100). Roughly half of branded dressing labels declare their serving in millilitres and half in grams; because the stored basis and the reference serving are both mass, no density assumption is ever made. Each product’s own declared serving is recorded and shown beside the normalized figure.
Calories
Energy is used as reported. Where a record reports kilojoules only, it is converted exactly (kJ ÷ 4.184) and marked 'converted'. Where a record reports macronutrients but no energy at all, energy is estimated with Atwater general factors (protein 4, carbohydrate 4, fat 9 kcal/g) and marked 'atwater'. Neither is presented as a label fact.
Protein per 100 calories
Protein per 100 calories is (protein g per 100 g ÷ energy kcal per 100 g) × 100. Being a ratio of two figures on the same basis, it is identical at every serving size, so no serving-size choice can affect it.
Missing values
A nutrient a source does not report stays missing. It is never treated as zero. "Not reported" and "none" are different facts, and conflating them would err in the flattering direction.
Which comparison figure is used
The comparator statistic is declared on the comparison set before metrics are computed, and the same statistic is used for every metric. It cannot be chosen row by row. Where the comparator statistic is zero, a ratio against it is undefined. Rather than report an unbounded improvement, the row is measured against the best-performing comparator in the set — the hardest comparison available.

What this does not say

  • This comparison makes no health, dietary or medical claim, and does not describe any product as healthy or unhealthy.
  • It does not assert that any comparator brand participated in, reviewed or endorsed it.
  • It reports label figures as published by their manufacturers. It is not a laboratory analysis and does not verify that any product matches its own label.
  • Label data carries a publication date. A label published some years ago may not match the package on shelf today, so every product’s publication date is included.
  • It says nothing about protein quality, amino acid profile, or how well the body uses it.
  • It is a ratio, so a dressing with very few calories can score well on very little protein.
  • Both figures come from labels that round protein to the nearest gram, which matters more for a product declaring 1 g than for one declaring 6 g.
  • It says nothing about protein quality or source.
  • Nutrition labels round protein to the nearest gram, so a product declaring 1 g contains somewhere between half a gram and one and a half.
  • Total sugar includes sugar naturally present in ingredients, not only sugar added to the recipe.
  • Fat is not automatically undesirable; this row reports the number, not a verdict.
  • Well Dressed’s own figures are brand provided, taken from its printed Nutrition Facts panel. Every other product’s figures come from USDA FoodData Central (Branded Foods), where the manufacturer submitted them.
